We are continually working on our menu, to keep it up to date and to cook mostly from the seasonal local products.
But that doesn’t stop us from creating some international dishes.
Like this one – Indonesian Soup Laksa. Soon we will serve it in our restaurant, but today we challenge you to cook it at home.
Ready? Write down the recipe:
Step1.
8 x shallots
5 x thumb ginger
2 tbsp garlic
5 x lemongrass
2 tsp Sambal Oelek (or any other Chilly sauce)
Purée into a paste in a blender, sweat for about 10 minutes in the big pan with a thick base on medium heat with couple tbs of vegetable oil.
(Crucial tip: always cook in a good mood. Lack of one? Pust good music on, put it loud and chop away!)
Step 2.
Add
1 tbsp curry powder
2 tbsp ground coriander
2 tbsp ground cumin
Sweat together on low for extra 5 minutes.
Step 3.
Add 4 cups coconut milk and 2 cups veg stock.
Cook for 20 more minutes, blend and pass.
Serving.
You can serve Laksa with:
Precooked Rice noodles
Shredded book choi
Bean sprouts
Green beans
Thai basil
Coriander
Mint
When serving, season the soup with 2 tbsp fish sauce and 1/2 lemon juice, or tamarind, salt and pepper.
